As of API version 2027-01, you can use the [identityProviderSubjectDelete](https://shopify.dev/docs/api/admin-graphql/2027-01/mutations/identityProviderSubjectDelete) mutation to unlink a customer from a third-party identity provider.

Pass the customer's ID as `customerId` and the identity provider subject's ID as `id`. You can get subject IDs from [Customer.identityProviderSubjects](https://shopify.dev/docs/api/admin-graphql/2027-01/objects/Customer#field-identityProviderSubjects). Unlinking signs the customer out of all of their existing sessions. The next time they sign in through the identity provider, they're linked again.

The mutation requires the `write_customers` access scope.
